Raw Food Made Easy
for 1 or 2 People
Book and DVD

Jennifer Cornbleet
ISBN#: 978-1-57067-175-3 - book
ISBN#: 92844-8576-9 DVD

I cannot get over how easy Jennifer makes raw preparation of foods! Her recipes are not only simple but ever so tasty! I sat and watched her DVD before really looking at her book and after watching for over an hour, I found myself 'needing' to get into my kitchen and 'wanting' to try out some of the recipes she showed me during the DVD.

Was I ever surprised when I started preparing my Zucchini Spaghetti and Marinara Sauce shortly before 5pm and by 5:45 I had already finished eating! After juicing, making smoothies and eating salads for the last few months it was a pleasure to experience this 'pasta'. The next day I was back in my kitchen preparing a Flourless Chocolate Cake and all I can say is YUMMMMMMMMY!!! I love the way she gives you one recipe but also offers you a few alternative ideas at the end. So instead of using raspberries on my cake, I decided to use blueberries as I had them on hand and it saved me a trip to the store.

Jennifer takes you through the entire process of preparation. She explains what tools you need to have on hand, how to use them and some little tips here and there on how to do some tasks simpler. Like removing the pit from an avocado for example.

Then she takes us on a journey of our senses… as we watch, wide-eyed and salivating the entire time as she prepares over 10 different recipes quickly and easily. Each one of them can be prepared in our own kitchens in less than 30 minutes. Who doesn't have that kind of time to prepare their meals? She even shows you what you can make ahead of time (like on a Sunday afternoon) so you can cut down your prep time even more.

I love the part about travelling and eating raw. She shows us what to bring with us and how to prepare without a kitchen so no matter how small your hotel room is, you can still eat healthy!

Her DVD is so simple to navigate. I swear, making things simple must be her personal mantra as she sure delivers in this area. You can choose to watch the entire DVD or just go to whichever recipe you want to make. So no time wasted fast forwarding through the DVD to find the part you want to watch (or share with friends).

Now, on to the book. She explains what you need in a raw kitchen from appliances to nuts… literally! She even helps you plan your grocery shopping so you can easily prepare mouth-watering tasty dishes every day.

She has a section on what to prepare ahead of time so you have it handy throughout the week, just like she demonstrates in her DVD.

Her recipes are easy to understand. She explains everything so anyone who can read could prepare these dishes. Here's an example from page 116 of her book:

Mock Rice Pilaf - yield one serving

Grated zucchini replaces rice in this savoury Middle Eastern dish.

Equipment:

  • peeler
  • chef's knife, 8-inch
  • cutting board
  • grater or a food processor fitted with a shredding disk
  • measuring cups
  • measuring spoons
  • small mixing bowl
  • rubber spatula

Recipe:

  • 1 cup peeled and grated zucchini (about 1 zucchini)
  • 1/8 tsp salt
  • 3 tablespoons Marinara Sauce (page 65)
  • 1 tablespoon chopped raw pine nuts
  • 2 teaspoons dark or golden raisins, soaked 10 minutes and drained
  • 1 teaspoon minced fresh parsley or dill weed

Place the zucchini and salt in a mixing bowl, toss, and let rest 5 minutes. Squeeze out the liquid with your hands and discard. Add the Marinara Sauce, pine nuts, raisins, and parsley to the zucchini and toss gently. Serve immediately.

How simple is that recipe to follow? I'm so pleased; it really makes preparation and eating so easy for me. Any vegetarian, vegan or rawbie can enjoy this meal for lunch or dinner. Of course, everyone will benefit by adding more raw foods to their diet and benefit.

Desserts are a huge part of many people's lifestyles but when the desserts are made with healthy ingredients - you can have them every day if you wish. There are many dessert recipes in this book. You can have your cake (stay healthy) and eat it too!

I highly recommend this book and DVD combination for anyone who wishes to add more health to their diet. If you are just starting a life where vegetarianism, vegan or raw is your lifestyle choice, this book is really a must-have. I use this cookbook daily. I have tried most of the recipes in this book and haven't found a single one I don't absolutely LOVE!

Oh I almost forgot to mention the little booklet which comes with the DVD. Everything she shares with you in the DVD is written out in the booklet. So you can make the recipes, shop for groceries and set up your kitchen with the aid of this booklet.

Be sure to read Jennifer's article in this issue of T.S.M.
